Get Cooking!

In a small to medium pan melt half a stick of butter at medium - medium high heat (If the butter begins to brown turn the stove down). Individually soften your tortillas in the hot butter then dip the tortilla in the warm Enchilada Sauce so that it is lightly covered in sauce. Lay the tortilla flat in your baking pan or dish and fill with your choice of shredded protein, add cheese, a pinch of sliced olives and roll the tortilla once over so that it is open on both top and bottom and the fold is against the baking pan. Repeat these steps for all 8 of your tortillas and use the remainder of your warm Enchilada Sauce to cover your filled tortillas. Lay down a generous amount of cheese then set in the oven for 10-15 minutes.
