Huevos Rancheros Mexican Style
Ingredients

1 Tub of Salsa Garcia Enchilada Sauce

2 Tbsp. Butter or Grapeseed Oil

4 Corn Tortillas
-
4 Eggs
-
Grated Cheddar Cheese (To your liking)

Cooked Shredded Chicken, Pork or Beef (Optional)

1 Avocado (Optional)
Directions
Prep:

Preheat oven to 300 degrees

In a medium to small pot, heat an entire container of Enchilada Sauce till it is hot and at a thinner viscosity (any remainder can be placed back into the refrigerator).

Shred the amount of cheese to your liking
Get Cooking!
In a small to medium frying pan melt butter at medium high heat. Lightly fry each tortilla so that each are soft and golden but not hard. Place 2 fried tortillas on each serving plate and in a medium pan fry two eggs to your liking per plate (4 Total). Place the fried eggs over your two golden tortillas and top the eggs with your choice of meat (Optional).Take your hot Enchilada Sauce and drizzle it over the dish until the eggs and tortillas are fully covered then top with cheese. Place both plates in the oven for approximately 5 minutes or until all the cheese is fully melted. Using a an oven mitt take the plates out and set them each on a kitchen towel or a place mat on your table. Serve with a couple slices of avocado and enjoy this hot breakfast dish with a friend.
